Twist & shake: Mulled apple & whiskey
MAKES 20 serves
- 3 litres cloudy pressed apple juice
- 4 tbsp date syrup
- zest and juice of 3 lemons
- 25g fresh ginger, scrubbed and cut into matchsticks (no need to peel)
- 6 green cardamom pods
- 3 star anise
- 700ml bottle of your favourite Irish whiskey
1 Pour the apple juice and the date syrup into a large saucepan and stir while heating gently, then add the lemon zest and juice, ginger, cardamom and star anise.
2 Stir for a minute more before putting the lid on.
3 Leave the mix to infuse for 30 minutes, remove the lid, increase the heat slightly for a minute then turn it off.
4 For each serve, ladle the hot juice into a mug through a tea strainer. Add 35ml of the whiskey, stir with a teaspoon and serve.
